Confession: Farm stands are a weakness of mine. I can’t see one without needing to pull over and buy all the things.
Kinda like when I see a Carvel, but way better for me, I guess (I see you chocolate soft serve).
I love summertime and the fact that there are tons of fresh veggies growing locally. Sometimes I only have to go as far as my backyard, other times just a short drive. Either way, I am grateful to live in a place with these yummy finds all summer long without having to step foot into a store!
This week’s meal plan features some of my favorite fruits and veggies- tomatoes, basil, peaches, zucchini, and cucumbers- that are super plentiful right now. Track down some local produce (or head to the grocery store), and let’s get cookin’!
Summer Favorites Meal Plan
Monday: Easy Caprese Chicken {21 Day Fix}
21 Day Fix: 1/2 GREEN, 1/2 BLUE, 1 RED (per serving) | WW Freestyle: 5 points (per serving)
Tip #1: Serve with a side salad to keep things easy and minimize clean up!
Tip #2: Grill up some extra chicken for Tuesday while you’re at the grill. It will keep very nicely in a food storage container, in the fridge.

Tuesday: 21 Day Fix Greek Spaghetti Squash Boats {Gluten-free}
