It’s a busy summer weekend here, but I wanted to get you a quick meal plan first, especially everyone who is getting to week three of Shift Shop.
Week three has us saying goodbye to the yellow container and upping our protein intake. See ya next week, potatoes! But don’t worry, you won’t even miss them with this delicious week of meals!

Monday: 21 Day Fix Cauliflower Cheeseburger “Mac”
Groceries:
- 1 lb lean grass fed ground beef
- 1 head of cauliflower
- rice flour (or flour of your choice)
- vegan butter or ghee
- unsweetened original almond milk
- shredded cheddar cheese (use Daiya for dairy free!)
- Himalayan salt
Tuesday: Chicken Pad Thai Zoodles {21 Day Fix}
Groceries:
- 1 lb boneless chicken breasts
- coconut oil
- 2 eggs
- 3 stalks green onion
- garlic
- fresh grated
- matchstick cut carrots
- 2 large zucchini
- Himalayan salt
- crushed red pepper
- 1 lime
- honey
- coconut aminos (or sub low sodium soy sauce)
- 1/4 cup chopped peanuts
- cilantro
Wednesday: 21 Day Fix Spaghetti Squash Lasagna
Groceries:
- olive oil cooking spray [I use my EVO]
- 1 lb of spicy Italian turkey sausage
- onion
- garlic
- ricotta cheese
- 1 egg
- homemade tomato sauce (or your favorite FIX approved jar sauce)
- 1 cooked spaghetti squash
- mozzarella cheese
- parmesan cheese
- fresh basil
Thursday: Flank Steak with Arugula and Shaved Parmesan {21 Day Fix}
Groceries:
- balsamic vinegar
- extra virgin olive oil
- garlic
- 1 lb flank steak
- cherry tomatoes
- red onion
- baby arugula
- shaved Parmesan
- freshly ground pepper
- Himalayan or Sea Salt
Friday: 21 Day Fix Italian Stuffed Peppers (top with some ricotta cheese for extra yumminess!)
Groceries:
- 4 large green bell peppers
- 1 lb extra lean grass fed ground beef
- 2 cups homemade or no sugar added tomato sauce
- garlic
- onion
- 2 cups of shredded zucchini or zoodles
- shredded Italian cheese blend
- fresh basil

These meal plans are saving my butt! Morning sickness means I can’t even contemplate meal planning (and I LOVE cooking and planning) but hubby needs to stay true to his Fix plan. Thank you! Everything has been delicious so far.

Ugh! Morning sickness is SO tough…I totally hear you. I even hated the thought of grocery shopping. Hang in there and I’m SOOO happy to hear the blog is helping out! More meal plans on the way now that my kids are back in school! 🙂
